From Mexico to the world: Agave and its admirable benefits

 Agave is a plant with long, triangular, fleshy radical leaves, ending in a strong sting and yellowish flowers in a bouquet on a central scape. This plant is native to Mexico and is often used in the manufacture of textile fibers and in the production of pulque, mezcal and tequila.

The name agave comes from the Greek word αγαυή meaning noble or admirable. Over 300 species of agave exist in different places in the center and west from México. 

Grows on thousands of acres at high altitudes, in the red volcanic soils. Agave begins as a seed, and once sown, it grows over 8 feet tall and wide. After 5 -7 years it reaches 10-5 kg weight, and is when it’s ready for harvesting.

The harvesting process starts removing the thorns, through the practice of barbeo, which consists of cutting the leaves in half.

The center of agave is then extracted from the earth for  then transported to the factory for further processing. This plant is noble for their reserve of carbohydrates, as they store fructans (polymers of fructose). Fructose contained in agave requires a simple obtention process; but premium agave syrup is a natural sweetener produced by thermal hydrolysis of fructans, that is free of additives, added sugars from other sources and offers a pleasant sweetness.

Agave is rich in beneficial properties. It stands out for having anti-inflammatory and antimicrobial properties, while helping to strengthen the immune system. In addition, it is a plant rich in vitamins A, B, B2, C, phosphorus, iron, niacin and protein.

Also has prebiotic properties that facilitate intestinal transit; at the same time, it is rich in fructooligosaccharides and inulin, which gives it a sweet taste and allows it to function as a sweetener with a glycemic index of less than 25%.
